In November 2017, the techniques of the new third production hall were provisionally completed.
As with P1 and P2, Ingenium was responsible for the design and monitoring of the special technical systems, mainly utilities, HVAC, plumbing, electricity, and sprinklers.
This third production hall covers approximately 7,500 m² is equipped with the technology required for various production lines for preparing, baking, and packaging speculoos. In 2017, a single line for speculoos was launched, and a second line was added in the summer of 2018. This was necessary in order to efficiently meet the increasing demand for speculoos.
In 2019, work began on renovating the company offices, which were completed in the course of 2020.

Energy study
Prior to the design of the techniques, Ingenium also drew up the energy study required to obtain the environmental permit. An energy study must demonstrate that the facility to be put into operation is the most energy-efficient facility that is economically feasible, in other words, that it uses the Best Available Techniques (BAT). Furthermore, the operator must demonstrate in the energy study that more energy-efficient installations available on the market, or measures that can be taken to increase the energy efficiency of the facility, have an IRR of less than 15% after taxes.
Special attention has been paid to an important consumer, namely industrial cooling installations. Taking into account the increased demand of P1 and the actual demand of P2, the additional cooling installation for P3 has been designed to achieve the highest possible EER (Energy Efficiency Ratio).
Meanwhile, Ingenium has also started designing the technical systems for the offices at the front of Gentstraat in Lembeke. The offices that currently house Lotus Bakeries' sales, marketing, and IT departments will be completely renovated by approximately the second quarter of 2019. Ingenium thoroughly investigated the following possibilities in particular: electrification of ovens, use of residual heat, electric boilers, and heat pumps.
